Cocktail of the Month - The Amaretto Sour

Being a ex-bartender I've always been a fan of a classic cocktail and the Amaretto sour is no exception. It was one of the first cocktails I learned to make at home and subsequently anyone who came to visit me was treated to one... not that they were complaining.
Made with amaretto liqueur, lemon juice, and sugar syrup, it’s known for its balance of sweet almond flavour with a citrus zing, traditionally served over ice with a cherry.
Inherently moreish, but don't just take my word for it. Give it a go!
You will need...
50ml Amaretto (Disaronno is my go to!)
25ml Fresh lemon juice
25ml Sugar syrup
Egg white (optional)
Ice
Maraschino cherry or lemon peel to garnish
Why egg white?
Adding egg white to create a velvety texture and creamy foam layer on top, making the drink look as luxurious as it tastes. Plus its extra protein, so win win!
Here's how...
Fill a cocktail shaker with ice.
Add the amaretto, lemon juice, and sugar syrup.
Shake well until chilled.
Strain into a rocks glass filled with crushed ice.
Garnish with a cherry or lemon and enjoy.
If using egg white, dry shake first (without ice), then shake again with ice for a smooth foamy finish.
In cupcake form, it creates a soft, fragrant sponge with a flavour profile that feels somewhat nostalgic but also sophisticated.
Adding a silky amaretto & lemon buttercream to an almond sponge with a cherry garnish, you’ve got a dessert worthy of cocktail hour.
